This week, we had a lounge-y morning where I made crepes and coffee to surprise Josh with breakfast in bed! Crepes are great because you can put pretty much anything you want into them after seeing what you have in your pantry/fridge, and they taste awe-some. I like sweet crepes better than savory for breakfast, but savory crepes can be really yummy for lunch and dinner. Here are some combinations we tried:

walnut and honey crepes, banana and peanut butter crepe, almond butter and strawberry preserve crepe, crepe combinations, breakfast in bed, married breakfast date, breakfast dates, marriage blog, husband and wife wedding photographer, personal postcaprese crepes, lemon and powdered sugar crepes, blueberry crepes, crepe combinations, healthy crepes, low cal crepes, whole wheat crepes, easy crepe recipe, husband and wife blog1: Almond Butter and Strawberry Preserve, 2: Walnut, Honey, Powdered Sugar, 3: Peanut Butter and Banana, 4: Lemon and Powdered Sugar, 5: ”Caprese” Tomato, Basil, Mozzarella (salt/pepper), 6: Blueberries, Syrup, Powdered Sugar

Other great filling ideas: (Sweet: Nutella, dark chocolate (melted), other fruits (peaches, kiwi, mango, apples, etc.), cream cheese, ricotta, cinnamon, yogurt sauce, butter; (Savory: Ham, turkey, chicken, salmon, bacon, cheese (cheddar/goat/feta), egg whites with cheese/peppers/salsa, spinach and gruyere, sautéed veggies, broccoli and cheddar, arugula)

I’ve tried a ton of crepe recipes and this is the best I’ve come up with, including my own healthier preferences. Leave out the cinnamon and vanilla for savory crepes.

Ali’s Awesome Sweet-Crepe Recipe

Ingredients: 1 1/3 c. coconut milk, 1 c. whole wheat flour, 1/3 c. egg whites, 1/2 c. water (1 tsp. cinnamon, 1/2 tsp. vanilla extract)

Instructions: Mix well with a fork. Coat small pan with a thin layer of coconut oil. Add 3 spoonfuls of mixture to pan, swirling to cover the bottom (paper thin). Cook each side until slightly brown (sides will start curling, too). Place toppings that need melting inside of the crepe and fold over. Add desired ingredients. Make more. Be happy. num num num.
